INGREDIENTS

  • 4 salmon fillets (approximately 150g each)
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 chopped garlic cloves
  • 1 chopped red bell pepper
  • 1 can (400ml) coconut milk
  • 1 teaspoon saffron
  • Juice of 1 lemon
  • Chopped fresh coriander for garnish (optional)

PREPARATION METHOD

  1. First, season the salmon fillets with salt and pepper to taste. Set aside.
  2. Then, in a large frying pan, heat the olive oil over medium heat. Add the onion and sauté until soft and translucent, about 3-4 minutes. Then add the chopped garlic and sauté for another 1 minute.
  3. Then add the red bell pepper to the pan and sauté for a few more minutes until it is slightly soft.
  4. Then add the salmon fillets to the pan, skin side down, and brown for about 3-4 minutes.
  5. Carefully turn the salmon fillets over so they don't fall apart and add the coconut milk to the pan. Season with saffron and mix gently to incorporate the flavors.
  6. Reduce the heat to medium-low, cover the pan and cook for another 6-8 minutes, or until the salmon is cooked through and begins to fall apart slightly at the touch of a fork.
  7. Before removing from the heat, drizzle the salmon with lemon juice to enhance the flavors.
  8. Finally, serve the salmon in the coconut milk while still hot, sprinkled with chopped fresh coriander on top, if desired.
