LASAGNA INGREDIENTS
- 250g vegan lasagna pasta
- 400g firm tofu
- 2 medium carrots, grated
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 400g tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Olive oil for sautéing
- 200g fresh spinach
- 1 cup almond milk
- 2 tablespoons cornstarch
- Grated nutmeg to taste

PREPARATION METHOD
- First, preheat the oven to 180°C.
- Next, heat the olive oil in a pan over medium heat. Add the chopped onion and garlic and sauté until soft and lightly browned.
- Then add the grated carrots and sauté for a few more minutes until they are soft.
- Then crumble the tofu and add it to the pan, stirring well to incorporate the ingredients.
- Season with salt, pepper, oregano and basil. Cook for a few more minutes and set aside.
- In another pan, sauté the spinach until wilted. Set aside.
- In a third saucepan, heat the tomato sauce over low heat.
- In a small bowl, mix the almond milk with the cornstarch until smooth. Add this mixture to the tomato sauce, stirring constantly until it thickens. Season with nutmeg to taste.
- Assemble the lasagna in a baking dish, alternating layers of pasta, tomato sauce, tofu mixture, spinach and repeating until the ingredients are finished. Make sure you start and finish with a layer of tomato sauce.
- Cover the dish with aluminum foil and bake in the preheated oven for about 30 minutes. Remove the foil and bake for another 10 minutes, or until the pasta is cooked through and the lasagna is lightly browned on top.
