STUFFED ARTICHOKE
INGREDIENTS
- 6 fresh artichokes
- 1 cup long grain rice
- 1 medium onion, finely chopped
- 1/4 cup extra virgin olive oil
- 1/4 cup raisins
- 1/4 cup pine nuts
- Juice of 1 lemon
- 1 teaspoon sugar
- Salt and pepper to taste
- 2 cups of water
- Fresh mint leaves for decoration
