Ingredients:
- 1 teaspoon vanilla essence (optional)
- 4 eggs
- 2 cartons of condensed milk
- 2 loaves of stale bread
- 1 cup milk
For the syrup:
- 2 cups sugar
- 1 cup warm water
How to prepare this Creamy Bread Pudding:
Pudding:
- Put the milk, bread, eggs, vanilla essence (if using) and condensed milk in a blender.
- Beat everything together for about 2 minutes until the mixture is smooth.
- Pour this mixture into a previously caramelized pan.
- Cover the pan with aluminum foil, shiny side down.
- Bake in a preheated oven at 180ºC in a bain-marie for approximately 1 hour.
- Remove from the oven, allow to cool and unmold the pudding.
Syrup:
- Put the sugar in a saucepan and heat over medium heat.
- Stir until the sugar begins to melt, then continue stirring until all the sugar is completely melted.
- Gradually add the water while continuing to stir.
- Keep stirring until the syrup thickens and the melted sugar has completely dissolved in the water.
- Remove from the heat and leave to cool.
Tip: The syrup will be liquid while hot, but will thicken as it cools.
Assembly:
- Once the syrup is cold, caramelize a pudding mould.
- Pour the unmoulded pudding over the syrup in the caramelized mould.
- Serve your Creamy Bread Pudding after chilling for a few hours.
