Ingredients:

  • 1 teaspoon vanilla essence (optional)
  • 4 eggs
  • 2 cartons of condensed milk
  • 2 loaves of stale bread
  • 1 cup milk

For the syrup:

  • 2 cups sugar
  • 1 cup warm water

How to prepare this Creamy Bread Pudding:

Pudding:

  1. Put the milk, bread, eggs, vanilla essence (if using) and condensed milk in a blender.
  2. Beat everything together for about 2 minutes until the mixture is smooth.
  3. Pour this mixture into a previously caramelized pan.
  4. Cover the pan with aluminum foil, shiny side down.
  5. Bake in a preheated oven at 180ºC in a bain-marie for approximately 1 hour.
  6. Remove from the oven, allow to cool and unmold the pudding.

Syrup:

  1. Put the sugar in a saucepan and heat over medium heat.
  2. Stir until the sugar begins to melt, then continue stirring until all the sugar is completely melted.
  3. Gradually add the water while continuing to stir.
  4. Keep stirring until the syrup thickens and the melted sugar has completely dissolved in the water.
  5. Remove from the heat and leave to cool.

Tip: The syrup will be liquid while hot, but will thicken as it cools.

Assembly:

  1. Once the syrup is cold, caramelize a pudding mould.
  2. Pour the unmoulded pudding over the syrup in the caramelized mould.
  3. Serve your Creamy Bread Pudding after chilling for a few hours.
