INGREDIENTS

Profiteroles dough:

  • 1/2 cup water
  • 1/2 cup milk
  • 1/2 cup butter
  • 1 pinch of salt
  • 1 cup wheat flour
  • 4 eggs

Stuffing:

  • 2 cups fresh cream
  • 1/4 cup sugar
  • 1 teaspoon vanilla essence

Cover:

  • 100g semi-sweet chocolate
  • 1/2 cup heavy cream

PREPARATION METHOD

  1. First, put the water, milk, butter and salt in a saucepan. Place over a medium heat and heat until the butter is completely melted. Stir well.
  2. Then, as soon as the liquid mixture starts to boil, add the flour all at once. Stir vigorously with a wooden spoon until the dough forms a ball and pulls away from the edges of the pan. This should take about 2 minutes.
  3. Then transfer the dough to a large bowl and leave to cool for a few minutes. Then add the eggs one at a time, beating well after each addition. The dough should be smooth and shiny.
  4. Then preheat the oven to 180°C. Using a teaspoon, place small portions of the dough on a baking sheet lined with baking paper, leaving space between them. This will create small mounds of dough.
  5. Place the baking sheet in the preheated oven and bake the profiteroles for 25-30 minutes, or until they are golden brown and firm to the touch. After baking, remove from the oven and leave to cool completely.
  6. While the profiteroles are cooling, prepare the filling. In a bowl, whip the fresh cream with the sugar and vanilla essence until stiff peaks form.
  7. Cut the profiteroles in half, but not all the way through. Fill each profiterole with a generous portion of whipped cream.
  8. Melt the semi-sweet chocolate in a bain-marie or in the microwave at short intervals. Mix the melted chocolate with the cream until you have a smooth, shiny coating.
  9. Place a spoonful of the chocolate icing on top of each filled profiterole.
  10. Finally, arrange the profiteroles on a serving plate and refrigerate for at least 30 minutes to allow the filling and topping to firm up a little. Then just serve and enjoy these delicious profiteroles!
