Tapioca bread
Tapioca is already a well-known ingredient for healthy eaters. Although it is a carbohydrate with a high glycemic index, it is gluten-free and, if consumed with sources of fiber, such as chia and flaxseed, it is an excellent food for providing energy.
Anyone who is already a fan of crepioca, brownies and tapioca pizza will love the possibility of tapioca rolls. These rolls promise to add to the flour's repertoire of recipes, without altering its healthy appeal.

INGREDIENTS
- 1/4 cup coconut oil
- 3 cups cow's or vegetable milk
- 1 and 1/2 cups granulated tapioca (not flour, granulated!)
- 2 eggs
- 1/2 cup grated cheese
- 1 and 1/2 cups sweet starch
- salt to taste
PREPARATION METHOD
- First of all, to make this bun, put the coconut oil in a non-stick pan, let it melt completely and then add the milk, mix well and bring to the boil.
- Next, place the tapioca flour in a baking dish and then pour this mixture of milk and coconut oil, still hot, over it.
- Then mix with a wooden spoon until smooth. Set aside. Your bun will be delicious.
- Then, once the tapioca is hydrated, add the beaten eggs, incorporating them well.
- Add the cheese, salt to taste and sweet sprinkles. Then knead the dough well until it is smooth and homogeneous. If you want a large unit, skip to step 4.
- If you want individual portions, leave the mixture in the fridge for 6 hours and then cut and shape the buns.
- Finally, pour the batter into a baking dish or non-stick pan greased with coconut oil and sweet sprinkles. Bake in a medium oven for 40 to 50 minutes. When cool, unmold and serve your tapioca bread.
