  • 500g boiled and mashed potatoes
  • 1 cup warm milk
  • 2 eggs
  • 1/2 cup sugar
  • 1 tablespoon salt
  • 1/2 cup melted butter
  • 10g dry yeast
  • 1 kg of wheat flour
  • Cream cheese (optional for filling)

PREPARATION METHOD

  1. First, cook the potatoes until they are soft. Peel and mash them into a smooth puree. Set aside.
  2. Then, in a small bowl, mix the yeast with a teaspoon of sugar and a little warm milk. Leave to stand for 5-10 minutes until it foams.
  3. Then, in a large bowl, combine the mashed potato, the rest of the warm milk, the eggs, sugar, salt and melted butter. Mix well.
  4. Then add the activated yeast mixture to the large bowl and mix again.
  5. Gradually add the wheat flour to the mixture, stirring continuously until it forms a dough that doesn't stick to your hands.
  6. Transfer the dough to a floured surface and knead for about 10 minutes or until it is elastic and smooth.
  7. Put the dough back in the bowl, cover with a damp cloth and leave to rest in a warm place for about an hour, or until it has doubled in volume.
  8. Once the dough has risen, divide it into small portions and shape into balls. If you prefer, fill each ball with a portion of cream cheese.
  9. Place the balls on a greased and floured baking sheet, leaving space between them. Cover again with the damp cloth and leave to rest for another 30 minutes.
  10. Preheat the oven to 180°C. Bake the loaves for about 25-30 minutes, or until they are golden brown on the surface.
  11. Finally, remove from the oven and allow to cool slightly before serving.
