- 2 cucumbers
- half a fresh fennel
- 5 radishes
- 2 hard-boiled eggs
- 650 ml of well-chilled liquid kefir
- 600 ml chilled sparkling mineral water
- Diced York ham
- 2 potatoes
- Salt to taste
- pepper to taste

PREPARATION METHOD
First, cook the potatoes in their skins until they are soft. Then let them cool, peel them and cut them into small cubes. Do the same with the York ham, cutting it into cubes.
Wash the cucumber, radish and fennel well. Grate the cucumber, radish and fennel into small pieces, reserving the leaves to flavor and decorate the soup. Grate the hard-boiled eggs as well.
In a separate container, mix the 600 ml of cold sparkling water and the 650 ml of liquid kefir. Add the remaining ingredients (cucumber, radish, fennel and egg) and season to taste.
Finally, garnish the soup with finely chopped fennel leaves.
