INGREDIENTS

  • 400g spaghetti
  • 200g diced bacon
  • 4 eggs
  • 1 cup (approx. 100g) grated Parmesan cheese
  • Freshly ground pepper
  • Salt to taste
  • 2 chopped garlic cloves
  • Extra virgin olive oil

PREPARATION METHOD

  1. In a large saucepan, bring the water to the boil and add a pinch of salt. Once it's boiling, add the spaghetti and cook according to the instructions on the package until it's al dente.
  2. While the pasta is cooking, heat a drizzle of olive oil over medium heat in a large frying pan. Add the diced bacon and fry until golden and crispy.
  3. Add the chopped garlic to the bacon and sauté for a few minutes until the garlic is lightly browned.
  4. In a large bowl, break the eggs and add the grated Parmesan cheese. Mix well until smooth. Season with a pinch of salt and plenty of freshly ground pepper.
  5. When the spaghetti is cooked, drain the water, reserving about 1 cup of the pasta cooking water. Add the spaghetti to the frying pan with the bacon and garlic, mixing everything gently.
  6. Remove the pan from the heat and gradually add the egg and cheese mixture to the spaghetti, stirring quickly so that the eggs cook with the heat of the pasta. If necessary, add a little of the reserved cooking water to help create a creamy sauce.
  7. Keep stirring until the sauce thickens slightly and coats all the spaghetti strands.
  8. Serve the Spaghetti Carbonara immediately, sprinkled with more grated Parmesan cheese and freshly ground pepper.
