GREEN CREAM OF BROCCOLI SOUP

INGREDIENTS

  • 3 cups broccoli, cut into small pieces
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons butter or olive oil
  • 4 cups of chicken stock or vegetable stock
  • 1 medium potato, peeled and diced
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Grated cheese (optional, for sprinkling)

PREPARATION METHOD

  1. In a large saucepan, melt the butter (or heat the olive oil) over medium heat. Add the chopped onion and garlic and sauté until soft and fragrant.
  2. Add the broccoli and potatoes to the pan. Sauté for a few more minutes, stirring occasionally.
  3. Pour the chicken stock (or vegetable stock) into the pan and bring the mixture to the boil. Reduce the heat, cover the pan and simmer for about 15-20 minutes, or until the vegetables are tender.
  4. Use an immersion blender to blend the vegetables in the pot until smooth. If you don't have an immersion blender, you can transfer the soup to a traditional blender in batches, but be careful of the hot steam.
  5. Return the soup to the pan and add the cream. Stir well to incorporate. Heat the soup over a low heat, but don't let it boil after adding the cream.
  6. Season with salt and pepper to taste.
  7. Serve the green cream of broccoli soup hot, with grated cheese on top, if desired.
