INGREDIENTS
Mayonnaise
- 3 tablespoons of lemon juice
- Salt and pepper to taste
- 200 grams of boiled, peeled and chopped potatoes
- 1/2 cup oil
- 2 hard-boiled eggs
- 1 tablespoon mustard sauce
- 2 raw eggs
- 2 cloves of garlic
Vegetables
- 4 cups diced potato seasoned with 1 drizzle of olive oil, 1/2 sachet of vegetable seasoning and salt and pepper to taste
- Chopped parsley to taste
- 2 cups diced carrots seasoned with 1 drizzle of olive oil, 1/2 sachet of vegetable seasoning and salt and pepper to taste

PREPARATION METHOD
- First of all, for the mayonnaise sauce, put all the ingredients except the oil in a blender and blend very well.
- Then slowly add the oil while the blender is still running until it reaches a creamy consistency.
- Then pour into a container and leave in the fridge.
- Meanwhile, for the vegetables, we'll put the potatoes and carrots in a pressure cooker and keep it closed over medium heat, cooking for 4 minutes after the pressure starts.
- Then turn off the heat, let the pressure come off naturally and pour the vegetables into a bowl.
- Finally, pour the mayonnaise sauce over the top, sprinkle with parsley, mix everything together and leave to chill in the fridge.
- Serve chilled and enjoy.
