SPINACH LASAGNA
INGREDIENTS
For the lasagna noodles:
- 9 sheets of pre-cooked lasagna pasta
For the spinach and mushroom filling:
- 300g fresh spinach, washed and chopped
- 200g mushrooms, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
- Olive oil
- Salt and pepper to taste
- Nutmeg to taste
White sauce:
- 3 tablespoons of butter
- 3 tablespoons of wheat flour
- 3 cups of milk
- Salt, pepper and nutmeg to taste
Assembly:
- 1 1/2 cups grated mozzarella cheese
- 1/2 cup grated parmesan cheese
PREPARATION METHOD
1. Preparing the filling:
- In a frying pan, sauté the onion and garlic in olive oil until golden brown.
- Then add the sliced mushrooms and cook until golden.
- Add the chopped spinach and cook until wilted.
- Season with salt, pepper and nutmeg. Set aside.
2. Preparing the White Sauce:
- Melt the butter in a saucepan over medium heat.
- Add the flour and stir until the mixture is smooth.
- Gradually add the milk, stirring constantly to avoid lumps.
- Cook until the sauce thickens. Season with salt, pepper and nutmeg to taste.
3. Assembly:
- First preheat the oven to 180°C.

- Add half of the spinach and mushroom filling.
- Pour some of the white sauce over the filling.
- Repeat the layers until you finish with a layer of white sauce.

4. Bake:
- Cover with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for another 10-15 minutes, or until golden brown.
