- Meanwhile, for the filling, put the sausage in a pan and brown it in its own fat. Add the olives and escarole and continue sautéing until all the water is gone.
- Then roll out the dough into a rectangle on a floured worktop, place the filling in the center and add the curd cheese on top.
- Then, spread the egg yolk on the sides and fold the sides over so that there are about 2 fingers of dough on top of the filling, fold the larger sides over and close tightly.
- Finally, transfer to a greased and floured tin, pour the egg yolk over the top and bake for 40 minutes in a preheated oven at 180ºC.
