FILLING

  • 1 cup milk
  • 1 tablespoon butter
  • 250 grams of grated minas cheese
  • 4 eggs
  • Chopped parsley to taste.

PREPARATION METHOD

  1. To make the empadinhas, first place the flour, butter and salt in a bowl.
  2. Then mix well with your fingertips until it forms a crumble.
  3. Then gradually add the egg yolks and 1 1/2 tablespoons of water. Then knead the dough well until it is smooth.
  4. Finally, cover the dough with plastic wrap and refrigerate for 30 minutes.

FILLING

  1. Mix the milk, cheese, butter and eggs. Set aside.
  2. Next, roll out small portions of dough into pie tins, leaving a little dough to make the tops of the pies.
  3. Then bake in a preheated medium oven (180 ºC) for about 3 minutes. Then remove the molds from the oven and fill each one.
  4. Roll out the remaining dough with a rolling pin and make round tops with the help of a glass. The pies are almost ready.
  5. Finally, cover the pies with the pastry lids. Then bake again for about 8 minutes or until the pies are golden brown.
