INGREDIENTS FOR THIS PIE RECIPE

For the dough:

  • 200g wheat flour
  • 100g diced cold butter
  • 50g sugar
  • 1 egg

For the filling:

  • 500g fresh pitted cherries
  • 100g sugar
  • 2 tablespoons cornstarch
  • Juice of 1 lemon
  • Lemon zest to taste

PREPARATION METHOD

  1. First, preheat the oven to 180°C. In a large bowl, mix the flour and sugar. Add the diced cold butter and, using your fingertips, crumble the mixture into a floury texture. Add the egg and mix until a homogeneous dough forms. Wrap in plastic wrap and refrigerate for 30 minutes.
  2. Then, while the dough is resting, add the cherries, sugar, cornstarch, lemon juice and zest to a saucepan. Cook over medium heat, stirring constantly, until the cherries begin to release their liquid and the filling thickens. Remove from the heat and leave to cool.
  3. Then take the dough out of the fridge and roll it out on a floured surface, forming a circle larger than the tart pan. Transfer the dough to the greased and floured tin, pressing it gently into the bottom and sides. Prick the bottom with a fork and place the cherry filling on top.
  4. Then, with the pastry filled with the filling, cover the pie with thin strips of pastry or close it with a pastry lid, making small slits for the steam to escape. Bake in the preheated oven for about 35-40 minutes, or until the pastry is golden brown.
  5. Finally, remove the tart from the oven and leave to cool before serving. Serve the cherry pie on its own or with a scoop of ice cream to bring out the flavor of the fruit even more.
