JAPANESE MILK BREAD

INGREDIENTS

  • 350g wheat flour
  • 50g sugar
  • 5g salt
  • 7g dry yeast
  • 120ml warm milk
  • 1 egg
  • 30g butter (at room temperature)

PREPARATION METHOD

  1. Activating the yeast:
    • First dissolve the yeast in the warm milk and leave to rest for 5-10 minutes until bubbles form on the surface.

    • Add the activated yeast, the egg and start mixing.
    • Add the butter and continue kneading until you have a soft, elastic dough.
  3. First fermentation:
    • Place the dough in a greased bowl, cover with a damp cloth and leave to rest in a warm place for about 1 to 2 hours, until doubled in size.
  4. Formatting the Bread:
    • Then transfer the dough to a floured surface.
    • Divide the dough into equal parts and shape each part into balls.
    • Place the balls side by side in a greased loaf tin.
  5. Second fermentation:
    • Cover the tin with a damp cloth and let the dough ferment again for about 45-60 minutes.
  6. Baking bread:
    • Preheat the oven to 180°C.
    • Bake the bread for about 25-30 minutes, or until it is golden brown and makes a hollow sound when tapped on the bottom.
  7. Cooling and Serving:
    • Finally, remove the bread from the oven and pan and let it cool on a rack before slicing.
