INGREDIENTS
- 1 large cabbage
- 500g ground beef (can be beef, pork or mixed)
- 1 cup uncooked rice
- 1 medium onion, chopped
- 2 chopped garlic cloves
- 1 can of tomato sauce (400g)
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon cumin powder
- 1/2 teaspoon paprika
- 1/2 teaspoon sugar
- 2 cups of chicken stock or water
- Fresh mint leaves for decoration (optional)

PREPARATION METHOD
- First, carefully remove the cabbage's outer leaves. Boil a large pot of water and immerse the whole cabbage in it for about 5 minutes, until the leaves are soft. Drain and leave to cool.
- Then, in a large frying pan, heat the olive oil over medium heat. Add the chopped onion and garlic and sauté until golden brown.
- Then add the minced meat to the pan and cook until it is completely browned and there are no more pink parts. Season with salt, pepper, cumin and paprika. Mix well.
- Then mix the uncooked rice into the frying pan with the meat. Cook for a few minutes, stirring occasionally, so that the rice begins to brown.
- Then pour the tomato sauce over the meat and rice mixture. Add the sugar to balance the acidity of the tomatoes. Stir well and cook for another 5 minutes, allowing the flavors to blend. If necessary, adjust the seasoning with salt and pepper.
- Take a cooked cabbage leaf and place a portion of the meat and rice mixture in the center. Fold the sides of the leaf over the filling and roll it up like a cigar, ensuring that the filling is tightly sealed inside the leaf. Repeat this process with all the leaves.
- In a large saucepan, place the cabbage cigars seam-side down. Pour the chicken stock or water over them, just enough to cover them. Bring to the boil, reduce the heat to medium-low, cover the pot and cook for about 45 minutes, or until the rice is cooked and the cigars are tender.
