INGREDIENTS
- 3 eggs
- 120 grams of white chocolate (also works with milk chocolate, in which case it's an overdose of chocolate!)
- 120 grams of cream cheese
PREPARATION METHOD
- First of all, to make this cake, break the chocolate into small pieces and place in a bowl.
- Then melt the chocolate in a bain-marie.
- Then beat the egg whites with a mixer until they reach a fine snow-like texture. A pinch of salt always helps.
- Mix the cream cheese with the melted white chocolate, gently at room temperature.
- Then add the egg yolks and mix well until it becomes a cream.
- Then gradually add the egg whites. Don't leave any chocolate chips.
- Then place in a baking dish. Choose a tempered glass pan.
- It's a good idea to place the glass pan in a baking dish with a glass (250ml) of water in the bottom. It will bake better.
- The first 15 minutes in the oven, use a temperature of 170°C, for the other 15 minutes lower the temperature to 160°C and then turn off the heat and leave for another 15 minutes.
- Finally, remove from the oven and sprinkle the cake with icing sugar.
A tip: place parchment paper on the bottom so that the cake fits snugly.
