This is the tastiest fluffy LEMON CAKE you'll ever try. It's light, moist, fluffy and tart. It's very easy to make!
INGREDIENTS fluffy lemon cake
3 eggs
1 cup (220g) sugar
Zest of 3 lemons
1/2 cup (125ml) squeezed lemon (sicilian or tahiti)
1/2 cup (125 ml) oil
1/2 cup (125 ml) milk
2 cups (256g) wheat flour
1 tablespoon baking powder
PREPARATION
Mix the eggs and sugar for 2 minutes or until it becomes a uniform, aerated mixture.
Add the oil, milk, zest and lemon juice.
Add the flour and stir until incorporated.
Finally, add the yeast and mix.
Transfer the dough to a greased baking sheet and bake in a preheated oven at 180 C for 40 minutes or until the toothpick test comes out clean.

8 tablespoons sugar
Juice of 1/2 a lemon
How to do it:
Mix the sugar and lemon until it forms a uniform consistency. Spread on the cake and decorate with lemon zest.
