INGREDIENTS
- 2 cups fresh spinach leaves, washed and chopped
- 1 cup crumbled ricotta cheese
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped onion
- 2 eggs
- 1/2 cup wheat flour
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- Vegetable oil for frying
The preparation method for this recipe is very simple and I'm sure that if you follow it step by step you will be able to make your recipe, it will be wonderful.
PREPARATION METHOD
- First, preheat a frying pan with vegetable oil over medium heat.
- Meanwhile, put a small amount of water in a saucepan and add the spinach leaves. Cook the leaves until they wilt, this will take about 2 minutes. Then drain the spinach well and press to remove the excess water. Leave to cool.
- While the spinach cools, let's prepare the rest of the ingredients. In a bowl, mix together the crumbled ricotta, grated Parmesan cheese and chopped onion.
- Once the spinach is cold, add it to the bowl of mixed ingredients. Then break the eggs and add them to the mixture, as well as the wheat flour, salt and ground black pepper.
- Now mix all the ingredients together until you have a homogeneous dough. Then leave the dough to rest for about 10 minutes, this will allow the flour to absorb some of the moisture in the mixture.
- While the dough is resting, return to the frying pan you preheated. Carefully form small portions of the dough with your hands and then gently place the dumplings in the hot oil.
- Fry the dumplings for about 2-3 minutes on each side, or until they are golden and crispy. Once fried, remove them from the pan and place them on a paper towel to absorb the excess oil.
- Finally, the spinach dumplings are ready to be served. Serve them hot as an appetizer or side dish, or you can prepare a yogurt sauce with herbs to go with them.
