Creamy curd:

INGREDIENTS

  • 2 cups natural yogurt (unsweetened)
  • 1/2 teaspoon salt
  • 2 tablespoons fresh lemon juice
  • Extra virgin olive oil (optional)
  • Chopped fresh mint leaves (optional)

PREPARATION METHOD

  1. In a bowl, first mix the natural yogurt and salt until the salt is well incorporated into the yogurt.
  2. Add the lemon juice and stir well to combine.
  3. Cover the bowl with a clean cloth or paper towel and let it rest at room temperature for 4 to 6 hours, or until the curd thickens and becomes creamy. The exact fermentation time may vary depending on the ambient temperature.
  4. Once the curd has reached the desired consistency, transfer it to the fridge to cool for at least 1 hour.
